I recently read the first anthology of Robert Asprin's Thieves' World and though only some of the stories were really good, I really liked the concept of the whole project. All of the stories in the book took place in the same city at roughly the same time, and each was written by a different author. The writers submitted thier main characters before writing thier stories so that the other writers could include them in thier own stories. The only rule was you couldn't kill someone else's main character. The setting and overall theme was laid out beforehand and a basic map was given to the writers as well. The foreward of the book even dealt with "inconsistencies" in the stories noting that everyone in the town is a liar and will put on a facade based upon who they are talking to...
I really liked the idea and thought that those of us who write should do something similar...
